    This is Ole-Martin Hansen, the Swedish salmon smoker who plies his trade in London, and lives in what can only be described as a Scandinavian-chic plywood box on top of his artisanal fish operation, called Hansen & Lydersen. He lovingly salts and smokes his salmon with juniper-infused hay, serenading the filets with piano music, and then distributes it to London chefs. “I am the salmon smoker,” he declares. “I should be trusted.” He is also my future husband.

    The biennial Slow Food Italy Cheese summit is back the Piedmont, for its 8th edition. Everyone from shepherds to ultra-small-scale cheese producers to chefs from all over descend on the town of Bra to talk dairy products. This year’s summit will focus on encouraging young people to become artisanal cheese makers–Bra will be renaming one of its piazzas the Piazza della Resistenza Casearia, the “Cheese Resistance Piazza,” to get young cheese revolutionaries excited–and, less  stirringly, on the issue of proper labeling. (Every revolution has its bureaucrats…) For attendees, there are “Milk Workshops” on topics like “Evolving Trends in Cheese Consumption” and “Counterfeit Cheese,” a master class on mozzarella, and 13 “Dinner Dates” in nearby villas and wineries.

    Artisanal L.A. is a two-day event features workshops, book signings, panels and vendor booths from some of the city’s most prominent food personalities and artisanal food producers. Panels include “How Farmers Markets are Made,” moderated by Laura Avery, and “Urban Homesteading” along with expert discussions of beekeeping and butchery. The weekend also includes demos by Intelligentsia coffee, the Eagle Rock Brewery, and much more.

    This recipe is courtesy of Taylor Brittenham, maker of Bitter Tears handcrafted bitters and co-proprietor of Ms. and His, a pop-up bar and cocktail catering service. You can get your hands on Bitter Tears Hina (hibiscus-rose) at Bar Keeper in Silverlake, Calif., or online.

    HINA VESPER
    Makes 1 cocktail

    3 ounces gin
    1 ounce vodka
    1/2 ounce Lillet Blanc
    Three drops Hina bitters

    Combine all ingredients in a cocktail shaker, add ice, and shake. Strain into a chilled martini glass.
